Wash and prepare fruit
The preparation method will depend on the fruit (or vegetables) being used. Soft fruits will just need any hulls, stems, skin or stones removed and roughly chopped or mashed and they are ready. Harder ingredients may need pre-processing or pre-cooking to achieve the desired texture, as only a few minutes of boiling is required once CSR Jam Setting Sugar® has been added.
Heat fruit and sugar in saucepan until sugar dissolves
Once your fruit has been prepared, add it to a large saucepan with CSR Jam Setting Sugar®. Stir over a medium heat until the sugar has completely dissolved (do not allow to boil). This should only take about 1 minute.
Bring to the boil. Boil for 4 minutes
When the sugar is dissolved, turn the temperature to high and bring your mixture to a full rolling boil (one that cannot be stirred down). Boil for just 4 minutes.
Remove from heat and skim off foam. Test for set
Remove jam from heat and skim off any foam with a tablespoon. To test for set you will need a chilled saucer (pop one in the fridge before you start making your jam). Spoon a teaspoon of the jam onto the plate and leave to set for a few seconds. Push your finger (or the teaspoon) through the jam, if it wrinkles it is ready, if not, bring back to the boil for an additional 2 minutes.
Bottle in pre-sterilized jars.
Once you are happy with the set, bottle your jam into your hot pre-sterilised jars (see ‘tips’ page for details on how to sterilise your jars and lids). Ladle your jam into your jars and seal with a lid. Set jars aside to cool - a vacuum will be formed to seal the jars as they cool.
